Thai cuisine is naturally abundant in plant-based flavours, vegetables, herbs, aromatic pastes, and rice-based dishes are central to the tradition. At Zoob Zib, our kitchen can accommodate vegetarian and vegan preparations across a wide range of menu items. Our green and red curries are available with tofu or mixed vegetables. Pad Thai can be prepared without egg. Som Tum can be made without fish sauce. Our fried tofu starter and spring rolls are fully plant-based. Guests with specific dietary requirements are encouraged to ask if our team is knowledgeable and happy to guide you through the best options.
Authenticity at Zoob Zib is not a tagline, it is the standard applied to every dish, every day. Our recipes come from Thailand’s regional cooking traditions, developed by a family with deep roots in Thai culinary culture. We use fish sauce imported from Thailand, real tamarind paste (not concentrate), full-fat coconut milk, fresh Thai herbs sourced regularly from specialty suppliers, and jasmine rice grown on Thai farms. When a dish calls for a mortar and pestle Som Tum, curry pastes, relishes we use one.
We do not pre-cook proteins or batch noodles. Every plate is cooked to order in a hot wok or prepared fresh in our kitchen. This means a slightly longer wait than fast-casual competitors and a dramatically better result in your bowl. We believe that is the correct trade-off, and so do our regulars.
Every dish at Zoob Zib Thai is built from traditional Thai cooking techniques and ingredients: galangal, lemongrass, kaffir lime leaves, fish sauce, tamarind, palm sugar, and fresh Thai basil. We do not use jarred pastes, rehydrated noodles, or pre-cooked proteins. The result is Thai food that tastes the way it does in Thailand: aromatic, balanced across all five flavour dimensions, and made to order every single time.

Galangal (Kha) a rhizome related to ginger with a piney, more complex flavour profile; the defining ingredient in Tom Kha. Kaffir lime leaves (Bai Makrut) are intensely aromatic leaves essential to curries, soups, and stir-fries. Fish sauce (Nam Pla) the primary umami and saltiness vehicle in Thai cooking, made from fermented fish; a direct substitute for salt. Tamarind (Ma Kham) is a sour fruit paste used in Pad Thai sauce, marinades, and curry bases.
